We imagine this to be what Julia Child might have made for friends on a brisk and chilly Autumn evening — a sensible supper using up the last of the garden tomatoes along with a fistful of foraged mushrooms, chicken and herbs simmered up with a glug of wine.
‘Chausseur’ (which translates to hunter) is a classic French recipe that makes use of whatever game was successfully hunted + any mushrooms found in the forest along the way home. It’s hearty, super rustic and very versatile.
…and since we’re surrounded in the Hudson Valley by some of the best apples around, we’ll get them all good and caramelized in butter + sugar for a memorably delicious Tarte Tatin.
