A delicate and versatile pastry dough that employs its high moisture content to create steam that puffs the pastry while baking as the water in the dough evaporates.

We’ll tackle both savoury and sweet with cheesy Gougères (that should forever elevate your cocktail party game), scrumptious Eclairs filled with cream and topped with icing and your classic Choux Chocolate (aka. Chocolate Cream Puff).
